Essentia's Tatami is the only mattress I've tested that uses certified organic memory foam. Made from hevea milk (natural rubber tree sap), it provides the conforming sensation of memory foam without petroleum-based chemicals. The difference is tangible — no chemical off-gassing whatsoever.
