GOLS (Global Organic Latex Standard) is the most rigorous certification for natural latex foam. To qualify, latex must contain at least 95% certified-organic raw material (sap from organically-managed rubber tree plantations) and meet strict standards on processing chemicals, packaging, and labor conditions.
GOLS-certified latex is rare — it requires the entire supply chain (plantation, latex processor, foam manufacturer) to be independently audited. Most mainstream natural latex mattresses use blended natural+synthetic latex; GOLS guarantees 95%+ certified-organic content.
Brands with GOLS-certified latex include Avocado Green Mattress (the Vegan and Eco Organic models), Birch by Helix, PlushBeds, and Naturepedic. These are the most extensively-certified mattresses in the U.S. consumer market.
GOLS pairs naturally with GOTS (cotton/wool) and MADE SAFE (whole-product) certifications. A truly fully-certified-organic mattress carries all three: GOLS for latex, GOTS for cover and wool fire barriers, MADE SAFE for the finished product.
GOLS is the latex equivalent of GOTS, verifying that a rubber slab contains at least 95% certified organic latex and tracing it back to certified plantations. It also sets limits on the chemical inputs used in curing, which conventional latex production does not disclose.
It is the only credible way to verify a 'natural latex' claim, because blended latex — often 30% natural, 70% synthetic — is routinely marketed with the word natural attached. If a brand claims organic latex without a GOLS number, ask for it; certified producers publish theirs.

GOLS is the gold standard for organic latex. If 'organic' is important to your purchase, look specifically for GOLS-certified latex (not just 'natural latex' or 'organic latex' marketing language without the certification).
